Lemon Vanilla Blueberry Bars
Ingredients
For the crust:
Zest of 1 lemon
1/4 cup Mannix Vanilla Sugar
6 tablespoons butter, melted
1 1/2 cups graham cracker crumbs
For the filling:
2 large egg yolks
14 ounces sweetened condensed milk
1/2 cup fresh lemon juice
1 teaspoon lemon zest
1 cup fresh blueberries
1/2 teaspoon Double-Strength Mannix Vanilla Extract (Original or Orange/Vanilla Blend)
Directions
Prepare the crust. Preheat the oven to 350°F. Lightly spray an 8 × 8-inch baking dish. Combine the lemon zest, Mannix Vanilla Sugar, melted butter, and graham cracker crumbs. Press the mixture evenly into the bottom of the dish.
Bake the crust. Bake at 350°F for 10 minutes. Remove from the oven and let cool.
Make the filling. Whisk together the egg yolks and sweetened condensed milk. Stir in the lemon juice, lemon zest, and Mannix Vanilla Extract.
Add the blueberries. Gently fold the blueberries into the filling. Pour the mixture over the cooled crust and spread evenly.
Bake. Bake at 350°F for 15–17 minutes, until the filling is set.
Cool and chill. Let the bars cool, then refrigerate for at least 1 hour before cutting and serving.
Storage: Refrigerate for 3–4 days.
