Vanilla Marshmallows

Ingredients

2 Tablespoons gelatin (2 envelopes Knox)
1 Cup cold Water, divided
2 Cups granulated Sugar
½ Cup powdered Sugar
¼ Teaspoon Salt
2 Teaspoons Mannix 2x Vanilla, Vanilla Almond or Orange Vanilla Extract

Directions

In a standing mixer combine gelatin and 1/2 cup cold water.

In a small saucepan, combine sugar and other 1/2 cup of water. Bring to a boil, stirring frequently until the sugar is dissolved and the mixture is clear. Take off the heat and add salt and your choice of Mannix Vanilla.

Turn standing mixer on low and pour sugar water in with the gelatin. Mix on low for 1-2 minutes to release some of the heat. Then, turn mixer on HIGH and mix for 13 minutes. Mixture will be very thick and creamy but not stiff.

Dust a jelly roll pan with 1/2 the powdered sugar (this is easiest to do through a sifter) and spread marshmallow out to the desired thickness and let cool to set. When it is cooled it will be tacky but will not fully stick to your finger. Dust the surface of the marshmallows with the remaining powdered sugar.

Cut into whatever shapes you like and enjoy!
